This is an amazing robust starter! The Dehydrated Starter will take a few additional days of feeding before you can start baking. This sourdough starter has ties from the southernmost part of Germany. The oral history indicates that the origins of the sourdough began around 1633 in a town called, Oberammergau. For any history buffs out there, you’ll know that the conception of this starter was sometime after Germany’s period of the “Black Death” or the plague. This culture is believed to be one of the finest European starters available and the third oldest living strain of sourdough! It makes wonderful rich tangy bread that has become associated with the southern part of Germany. It comes with quite an interesting and rich history as well. It literally took me years to track down a reliable German culture from this time period. This is the only historic German starter I've been able to locate that has been passed down through one single family for almost 400 years. The bread it leavens is absolutely fabulous. How fortunate I was in having found it in my travels abroad. It is one of my favorite starters and now I share it with you! Bavarian "Black Death" Sourdough Starter Circa 1633. Vegan and dairy-free.
For black bread use dark rye flour. Different flours will result in different shades of the starter and of the bread.
