So how did I get this sourdough starter ?! Well once upon a time I took a weekend flight ✈️ flying out of Harrisburg Pennsylvania >>>straight to Canada! It was my sole reason for the trip was to pick up this starter.
Being the starter collector that I am, I had done a lot of searching for the perfect Einkhorn starter and I was able to connect with a family from Camaldoli Italy that also owned a home in Canada. How cool is that ?!
What’s so special about it ? Well this starter is from the Camaldoli Monastery and is more than just a culinary ingredient; it represents a bridge between the past and the present, connecting modern bakers to the spiritual and communal practices of medieval monks. As it continues to be nurtured and shared, this ancient starter encapsulates the essence of tradition, resilience, and the transformative power of food. The legacy of the Camaldoli Monastery not only endures through the bread that is baked but also lives on in the stories and practices of those who partake in this timeless craft. Legend states that this starter could be over a thousand years old, being in continual use since the monastery was first built. It is light and has a complex and delicate sourness profile.You will receive fresh sourdough starter per order made with Organic Einkorn Whole Wheat Flour which is enough to build your own endless supply of sourdough starter for your breads and baked goods and instructions. I have chosen Jovial' Einkorn flour because according to Jovial Foods, Einkorn has remained untouched by modern hybridization and large-scale agriculture for 12,000 years.
It is also becoming the wheat of choice for the gluten sensitive due to its very weak gluten content and is much easier to work with than gluten free flour.
